Bacon and Roasted Sweet Potato Salad with Apple and Raisins

This is a really easy recipe that is great for a starter or a lunch snack. The sweetness of the apple, raisins and sweet potatoes are balanced with the apple cider vinegar dressing and bacon. It's a really cheap and filling meal to keep you going over the Autumn months!

Serves 4

 

 

Ingredients:                                                        Tesco

 

1kg Sweet Potatoes                                                  £1.00

Unsmoked Bacon                                                      £2.00

Mixed leaves Salad                                                  £0.50

Red Onion                                                           £0.13

Raisins                                                             £1.00

Rosemary                                                            £0.70

Gala Apple                                                          £0.33

Salt and Pepper

Extra Virgin Olive Oil                                                   

Apple Cider Vinegar

 

Total:                                                              £5.66

Method:

 

Peel the sweet potatoes and cut into 2.5cm/1 inch cubes

 

Put into small roasting tin and drizzle with avocado oil and sprinke with rosemary leaves

 

Put into the oven at 200 degrees Celsius and cook for 35-40 mins, turning over every 15 mins

 

Peel and dice the apple, dice the red onion, and roughly chop 20 raisins into small pieces

 

Add to the mixed leaved salad and season with salt and pepper

 

Dressing:

 

Add to 1 tbspn extra virgin olive oil to 1 tsp Apple Cider Vinegar. Season with salt and pepper and mix onto the salad

 

 

Fry the bacon in a non stick frying pan for 8-9 mins on med/high heat until crispy. Add to the salad.

 

Take sweet potatoes out of oven and toss in with salad

 

 

And you're done!
